This is a thin, sweet batter pudding.
Ingredients:
2 large eggs
1/2 cup milk
1/2 cup sugar
1/2 cup plain flour
1 teaspoon vanilla essence
1/4 teaspoon salt
400 gram can of apricot halves (drained)
Method:
Preheat the oven to 200 degrees.
Whisk eggs and milk together.
Add sugar, flour, vanilla and salt. Whisk until it is a smooth batter.
Pour into a shallow oven proof dish.
Arrange the apricot halves over the batter.
Bake for about 40 minutes - keep an eye on it in the oven as it can be cooked sooner. It will look golden and puffy.
Allow to cool a little then dust with icing sugar.
This is also nice cold.
