Blueberry Muffins

I actually put raspberries in this instead of blueberries - delicious!!!

Ingredients:
1 and 1/2 cups plain flour
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 and 1/2 teaspoon white sugar
1/2 teaspoon cinnamon
1 large egg
1/4 cup milk
1/4 cup vegetable oil (I just use Olive or Canola - whatever is handy and in the cupboard)
1 tablespoon lemon juice
3/4 cup fresh or frozen blueberries (raspberries and I usually sneak it up to a cup or so)

Method:
- Preheat oven to 190 degrees
- Mix the flour with 3/4 cup sugar, baking powder, baking soda and salt.
- In another small cup or bowl (i use a ramekin) mix the 1 and 1/2 teaspoon of sugar with the cinnamon.
- In a third bowl use a whisk to mix the egg, milk, oil and lemon juice until smooth.
- Add the liquid mixture to the flour and stir to a batter.
- Stir in the blueberries (raspberries). Don't mix too long as their juice will change the batter colour.
- Put into muffin tins and sprinkle cinnamon and sugar mix over the top.
- Bake for about 20 minutes or until they are golden and puffed up.
These are delicious warm.

The recipe says it makes 9 but I can usually get 12 out of the mixture.
