A favourite of my brother and my daughter. Great for children as the flavour jelly you use dictates the colour of the biscuits.
Ingredients:
100 grams butter
1/4 cup sugar
1 and 1/2 cups plain flour
1 packet jelly crystals
1 egg
1 teaspoon baking powder
Method:
Cream the butter, sugar and jelly crystals until light and fluffy.
Add the egg and beat well.
Sift the flour and baking powder together and add to the creamed mixture. (I just throw the flour into the sugar butter and egg mixture).
Mix until well combined.
Place in teaspoonful lots on a lightly greased tray and press with the back of a fork.
Bake at 180 degrees celcius for 10 - 12 minutes.
