This is one of Jo Seagar's recipes and it is awesome!
Ingredients:
250grams butter
1 and 1/2 cups flour
4 tablespoons cornflour
2 heaped tablespoons custard powder
2 teaspoons baking powder
4 - 5 cups of gooseberries (topped and tailed, frozen are fine)
icing sugar (for dusting before serving)
Method:
Heat oven to 200 degrees.
Spray your dish with non stick cooking spray. (I use a rectangular casserole dish for this recipe)
Beat the butter and sugar in an electric mixer until creamy.
Add the eggs one at a time and then the dry ingredients.
Mix it all until it clumps around the beater.
Press 2/3 of the mixture into the base and up the sides of your dish - it is quite sticky so keep your hands floured to make it easier.
Add the gooseberries to the dish and then put small blobs of the remaining mix over the top. It spreads when it cooks so will cover over the top of the gooseberries - don't worry if it looks knobbly and messy before cooking.
Bake for about 20 minutes and then turn the oven down and cook for an extra 15 - 20 minutes until the top is golden and crisp. if you are using a deep dish with more gooseberries you will need to cook this for longer.
You can serve this straight away (dusted with icing sugar) or leave it in the tin to cool then reheat.
I bake this then freeze the leftovers - it keeps fine in the freezer and tastes good reheated in the microwave.
