Chocolate Pudding

So basic and yet so good. This is nice and easy for a pot luck dinner or for a large group. It isn't a huge pudding but it seems to cover a group well and is easy to double the recipe for.

Ingredients:
2 oz butter
1 cup sugar
1 egg
1 teaspoon of baking powder
1 cup flour
vanilla essence
3 tablespoons cocoa
1/2 cup milk
1/2 cup hot water

Method:
Cream butter and half cup of the sugar.
Add egg, flour, 2 tablespoons of cocoa, vanilla essence, baking powder and milk.
Put into a greased cooking bowl, casserole dish or some such.
Pour over sauce made with remaining sugar, cocoa and hot water.
Bake in moderate oven (approximately 180 degrees) for 35 to 40 minutes.


This is delicious served with vanilla ice cream and raspberry coulis or just hot mashed up raspberries!
I have also had this with goody gum drop ice cream and it is surprisingly nice as well.
Try putting raspberries (frozen) into the chocolate batter and cooking them in it. This is also yummy!
