I am terrible at making pikelets but these ALWAYS work and serve me well.
Ingredients:
1 teaspoon baking soda
1 cup milk
1 egg
3 tablespoons sugar
2 cups of flour
2 teaspoons of cream of tartar
Method:
Dissolve the baking soda in the milk
Beat the egg and sugar then add the flour and cream of tartar.
Add the milk and mix to a smooth batter. (add more milk of you need to but the batter should be a little thick)
The key to cooking pikelets is to let the first side bubble and then turn for a quick finish.
Add some jam and cream on a cold afternoon or after a busy morning - scrummy!!!
